Herrings under a fur coat is a popular, in Eastern Borderlands, herring salad. It is also known there as `szuba`. Colourful and easy to prepare and delicious! I recommend it for all lovers of herrings ;-) This herring salad will be great as a meal for a Christmas Eve supper. Szuba, that is, herrings under a fur coat, is a multi-layered salad, which can be prepared in many ways. However, thanks to my readers, I found out that there are always herrings, onion, boiled potatoes, beetroots, eggs and mayonnaise. However, carrot or pickled cucumbers are often added. This time, I made a traditional version with boiled carrots ;-)
Herrings under a fur coat – ingridients:
- Red beets – 3 large
- Carrots – 4 large
- Potatoes – 3 large
- White onion – 1 medium size
- Herring in oil – 5 or 6 flaps of herring
- Pepper – to taste
- Egg – 4 eggs
- Mayonnaise – several heaped tablespoons
- Chives for decoration
Herrings under a fur coat – how to make it:
Cut herrings and onion into cubes, mix them together. Put them on the bottom of a dish. Spread with mayonnaise.
Boil potatoes, carrots and beetroots in jackets. After boiling, peel them.
Boil eggs hard. Shell them.
Grate potatoes, carrots and beetroots.
On a herring layer, onion and mayonnaise, arrange a layer from grated potatoes. Add salt and pepper. Spread with another layer of mayonnaise.
Grate beetroots and make a layer. Spread with mayonnaise.
Then, grate carrots and spread with mayonnaise.
Finally, grate boiled eggs and put them as the last layer. Decorate top of the salad with finely chopped chive. Keep in a fridge covered, so as not to let the top layer of the eggs go dry. Bon appetit!
